Jane and Phillip Wong started the Black Swan in 1962 after immigrating to Pueblo, Colorado from China. The restaurant was attached to a bar on the 300 block of Union Avenue and quickly became famous for delicious fried chicken and Chinese food.
Phillip passed away in 1974 leaving Jane and her daughter Penny to run the restaurant. Through hard work and determination, they built a legacy. In 1982, a devastating fire burned down the original Black Swan and the restaurant was relocated to 7th and Main.
The restaurant continued to operate on Main Street through Jane's retirement and beyond. The challenges of Covid scaled the restaurant back and eventually the building was in need of repairs, so the Black Swan temporarily closed its doors in 2023.
The Present
Now, Jane's grandson Tyler is going to continue the legacy of the Black Swan. Tyler made a career in hospitality working in restaurants and hotels for over a decade. His passion and love for Black Swan is going to bring the Black Swan back, this time at Fuel & Iron Food Hall in downtown Pueblo. With a bold, creative vision for the Chinese Menu, the sky is the limit for the future of Black Swan.
The Future
Although the Black Swan is located at Fuel & Iron now, the ultimate goal is to one day resume restaurant operations in a fully modernized building. The future will harken to the past and the classic American half of the menu will return better than ever! The famous fried chicken will make a triumphant return!
